The acclaimed restaurant at Quoin Rock Wine Estate has unveiled an evocative new seasonal menu by Executive Chef Edmund Viljoen — a refined expression of South African terroir shaped by wild landscapes, farm-driven ingredients and fine dining technique.

Inspired in part by Quoin Rock’s remote sister farm in Agulhas, the new winter menu embraces a true farm-to-table philosophy, drawing from the rugged beauty and untamed spirit of the region. From foraging expeditions across indigenous landscapes to time spent hunting springbok on the farm, Viljoen’s latest creations reflect a deeply personal connection to the land.

The result is a menu layered with authenticity and restrained luxury. Seasonal dishes such as Springbok Tartare, Ostrich Neck Ragout and Duck Leg Confit celebrate bold South African flavours while maintaining the precision and elegance expected of Quartz’s contemporary fine dining approach. Each plate is designed to pair seamlessly with Quoin Rock’s award-winning wines, creating a winter dining experience centred on warmth, depth and craftsmanship.

“This season is about stripping back the noise and focusing on the integrity of what we harvest,” says Viljoen. “When the farm manager, winemaker and chef come together, something special happens.”

More than simply a menu refresh, Quartz’s winter offering reads as a narrative of place — one that moves from vineyard and veld directly to the table. The interplay between wild game, seasonal produce and polished culinary execution gives the menu a sense of both sophistication and soul.

Desserts continue the storytelling. Among the season’s standout finales is the Guava Bavarois — a delicate reimagining of the classic French dessert infused with unmistakable South African nostalgia. Crafted from silky guava purée folded into a light mousse-like texture, the dessert balances tropical acidity with gentle sweetness and is paired with Quoin Rock Vine Dried wine for a rich, layered finish.
